Mexican beef and corn casserole #CountryCrockCasserole


 

Recently I got contacted from Country Crock about doing a showing you one of there many recipes but change it up.  The recipes was for a Mexican  beef and corn casserole, which looked amazing alone so thinking of a way to make it better took me awhile but finally I had the idea about adding some Mexican rice on the bottom.  So that is what I did and here is the ingredients and directions on how to make.

 

Ingredients- (enough for 8-10 ppl use a 9×13 casserole dish)

 

2lb of ground beef

1 can of black beans must drain (15.5 oz)

1 can of Mexicorn must drain (11 oz)

½ cup of salsa

½ cup of cheese

1 box of ready to make Mexican rice

-sour cream- optional for on top

 

First think you need to do is turn your oven on to 400, next you will follow the directions on the box of rice mix and let that cook.  While that is cooking start to brown your beef.  Once you beef and rice is done you are ready to make the casserole.  

The way I made was - first I laid the layer of rice down and make sure you press it down so it isn’t lose.  Next you will add your layer of ground beef on top.  Next you get your Mexicorn and bean out drain them and then mix together in a separate bowl.  Once mixed up add on top of the beef.  After you have that done all you add the cheese and then place in the oven for 15-20 minutes.  After you are done you can add the sour cream on top if you want.
